Ingredients:
- Milk powder-1 cup
- Maida / flour- 1 tbsp
- Baking Soda- 1/4 tsp
- Water-3 tbsp (or little more)
- Cardamom powder- 1/4 tsp
- Butter soften-1 tbsp
- Semolina-1 tbsp
- Water-1 tbsp
- Oil /ghee-for deep frying
Ingredients For The Sugar Syrup:
- Sugar- 1 1/2 cup
- Water- 1 1/2 cup
- Cardamom powder-1/4 tsp ( or Saffron strands -few.)
- Sliced pistachios-to garnish (optional)
- In a small bowl mix semolina with 1 tbsp of water and keep it aside.
- In another large mixing bowl; add milk powder and soften butter; crumble it well with hands.
- Add baking powder and soaked semolina.
- Crumble it again with hands.
- Make a well in the center and add 3 tbsps of water.
- Add flour and mix well o form a dough without any lumps (add little more water if necessary).No need to knead well.
- Rest it covered for 5 minutes.
- After that grease your hands well with water or oil and make small balls out of the dough. There must be no cracks in the dough.
- Heat a pan with oil; when it is hot make the flame to low; add the prepared balls one by one without over crowding.
- Fry them in low flame until nice golden brown in color evenly.
- Meanwhile prepare the sugar syrup in another bowl by adding sugar and water.
- When it starts boiling add cardamom powder and lemon juice; mix well.
- When it boils well add fried gulab jamuns. (Gulab jamuns must be warm while adding to the syrup; not hot or not so cold).
- Cook them n syrup for a minute and turn off heat.
- Cover the lid and soak them in syrup for at-least 4 hours.
- Serve chilled with slices of pistachios or by topping it with a scoop of ice cream.
