Kai pola is a famous sweet Malabar dish rich with eggs and bananas. It looks like a cake but no baking is involved. It takes only few minutes to make and it tastes so delicious.

- Banana-2 (Kerala large banana)
- Eggs-4
- Cardamom powder-1/4 tsp
- Sugar-3 tbsp
- Milk-1 tbsp
- All purpose flour-1 tbsp
- Baking powder-1/4 tsp
- Ghee-2 tbsp
Preparation:
- Cut the bananas in to small square pieces.
- Heat ghee in a small non-stick pan, roast cashew and raisins until golden in color.
- Take it out from the pan and keep aside.
- In the same pan add roast the banana pieces till golden brown in color.
- Keep aside and let it cool.
- In blender add eggs, sugar, cardamom powder, all purpose flour and baking soda.
- Blend well,
- Pour the blended mix over the banana pieces and make sure that all the banana pieces are immersed in the egg.
- Cover the lid and cook it on very low flame for about 20 minutes.
- After 10 minutes of cooking; open the lid and garnish on top with roasted cashew and raisins. Cover it and cook for another 10 minutes.
- Insert a tooth pick or fork in the center and make sure it comes out clean.
- Cut them in to slices and enjoy!!!
